Ingredients

  • 2 large tomatoes (carb)
  • 1 desert spoon sun dried tomatoes (fat)
  • Handful basil, coriander or parsley (whichever is your favourite)
  • Pinch of Himalayan pink salt
  • 2 soaked dates (carb)
  • Pinch of cumin
  • Handful of cashews (fat)
  • A mugful of water

Blend all the above in a powerful food blender – add more water if it needs to be thinner or more cashews if you prefer it creamier. Blend until its really smooth. If you have a vitamin blender leave the soup in on high for 8 minutes

If you have a standard blender remove when the consistency is smooth and pop in a saucepan. Heat on a low heat until steam appears. Do not let it simmer or it is no longer raw!

To PFC balance the meal, serve with a boiled egg.
